Suryagarh sits with Jaisalmer to its east and the Thar Desert to the west, inspired by its location to preserve traditions. Dinner on the Dunes recreates the majesty of the past with live music by a folk singer under a canopy of stars, the succulent flavours of a nomadic hunt menu and a fireworks display. Expect local specialities such as butter-roasted corn and almond kebabs, paneer Mathania made with the eponymous town’s chillies, hunter-style hare roasted on a wood fire and braised in stew, country fowl simmered in milk, pudina pulao, lauki halwa and anjeer barfi.
